{"id":139282,"date":"2026-04-14T14:22:14","date_gmt":"2026-04-14T04:22:14","guid":{"rendered":"https:\/\/future.supercurious.au\/homebyholly\/?p=139282"},"modified":"2026-07-20T17:10:20","modified_gmt":"2026-07-20T07:10:20","slug":"love-cooking-spinach-ricotta-crespelle-with-sugo","status":"publish","type":"post","link":"https:\/\/future.supercurious.au\/homebyholly\/love-cooking-spinach-ricotta-crespelle-with-sugo\/","title":{"rendered":"love.cooking Spinach &#038; Ricotta Crespelle with Sugo"},"content":{"rendered":"<p><strong>Spinach &amp; Ricotta Crespelle with Sugo<\/strong><br \/>\nServes 6<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Cr\u00eapes<\/p>\n<ul>\n<li>4 eggs<\/li>\n<li>250 g flour<\/li>\n<li>4 cups milk<\/li>\n<li>pinch salt \u2022 butter (for cooking)<\/li>\n<\/ul>\n<p>Filling<\/p>\n<ul>\n<li>500 g cooked spinach, finely chopped<\/li>\n<li>600 g ricotta<\/li>\n<li>1 cup parmesan<\/li>\n<li>salt, pepper &amp; pinch nutmeg<\/li>\n<\/ul>\n<p>Sugo (sauce)<\/p>\n<ul>\n<li>1 onion (diced)<\/li>\n<li>1 carrot (diced)<\/li>\n<li>1 celery stick (chopped)<\/li>\n<li>handful blended porcini<\/li>\n<li>2 cloves garlic<\/li>\n<li>1.2 L passata<\/li>\n<\/ul>\n<p>Finish<\/p>\n<ul>\n<li>Parmesan &amp; knobs of butter<\/li>\n<\/ul>\n<p>Method<\/p>\n<ol>\n<li>Sugo &#8211; Saut\u00e9 onion &amp; garlic. Add carrot &amp; celery; cook until soft. Stir in porcini, add passata and simmer 90 mins. Season to taste<\/li>\n<li>Cr\u00e9pes &#8211; Whisk eggs, milk &amp; salt. Gradually add flour until smooth. Cook \u00be ladle batter in a lightly buttered pan, swirling to coat. Cook until set and lightly golden, flip briefly. Repeat.<\/li>\n<li>Filling &#8211; Mix spinach, ricotta, parmesan, salt, pepper &amp; nutmeg.<\/li>\n<li>Assemble &#8211; Spread sugo in a baking dish. Fill and roll cr\u00eapes, placing seam-side<br \/>\ndown.
